Food Allergy Training for the F&B Team We all know there are 14 major allergens, but memorizing them can be challenging for your team. To simplify this, I've designed a unique method that categorizes them into six main groups: 1. Three that can make a cake: Milk, Flour, Eggs 2. Three that live in the sea: Fish, Shrimps, Calamari 3. Four that you can eat as snacks: Nuts, Peanuts, Sesame, Lupine 4. Two that can be added as sauces: Soy, Mustard 5. A green one: Celery 6. A food preservative: Sulfite (found in wine) This innovative approach, which I personally developed, makes it easier for the team to remember the allergens. Additionally, I followed the training with an interactive activity where the team identified these allergens visually in ingredients on the buffet. This hands-on practice reinforces their learning and ensures they can recognize allergens in real-world scenarios. A few years ago, my nephew shared with me that he hated lunchtime at school. Puzzled, I asked why, knowing that for my kids this was their favorite part of the day. He explained that while his friends were in the cafeteria line, laughing and chatting, he sat apart—because of a severe food allergy. It wasn’t about preference. It was about safety. That moment stayed with me. Because while allergen management in schools is about preventing medical emergencies, it’s also about belonging. Research shows that **1 in 13 children** now has a food allergy, and for many, school is the riskiest environment they encounter. Yet, schools that implement strong allergen management programs not only reduce risk, they also create inclusion: children no longer feel singled out, and parents can send their kids off in the morning with less worry. Effective allergen management means: ✅ Building menus with transparency—so families know what’s being served. ✅ Training staff on cross-contact prevention, emergency response, and clear communication. ✅ Partnering with parents to understand each child’s unique needs. ✅ Creating systems where safety measures are baked into operations, not bolted on as afterthoughts. When we founded Benedict Blythe Foundation 11 months ago, our focus was on trying to change the world of allergies in schools to make them safer and more inclusive places for pupils. We've been doing this through our campaign for legislation, practical research, sharing guidance and sharing knowledge https://lnkd.in/egijfU9B Our recent research in collaboration with Sheffield Hallam University, which we will be publishing next week, has shown us the need for clearer information for teachers and schools. It’s also shown us how hard it is for parents to know what to ask of schools, and how to check what safeguards schools have in place. So when ISBA, Independent Schools Bursars Association, contacted us to develop a code of practice for schools on managing allergies, we jumped at the chance. The Schools Allergy Code clearly, simply and transparently outlines steps schools should take to ensure they are allergy safe. It builds on the four pillars of our legislative ask with some additional detail and a practical checklist for schools to self assess their adherence. The code is free to access, free to use, has a checklist that anyone can download. Any school can say they adhere to the code following a self assessment, or they can apply to join a register managed by The Allergy Team The code was developed with ISBA (Independent Schools Bursars Association) The Allergy Team, parents, clinicians and educators. It outlines good practice guidance and will hopefully raise the bar of allergy awareness in schools. You can share the code with your schools by downloading the documents from www.schoolsallergycode.com This feels like such a simple but important step. We know teachers and schools care hugely about the pupils in their care, but they're being asked to do more with less. Knowing what steps they can take to make the school environment safer will be a game changer for many.
